If you are looking for a way to feel warm, cozy and comfortable, this spin on tomato soup will bring all of those feelings in one bowl.
With fruit as the only sweetener, this treat works all year long. I change up the fruit based on the season. In the summer, I use berries and peaches, and in the winter, apples!
1/3 cup oats
2 dried figs (any dried fruit can work here)
2 tsp. nut butter
1 peach, pealed and cubed, divided
1 plum, pealed and cubed
Preheat oven to 325 degrees. In a food processor, combine oats, figs, nut butter, cinnamon and 1/4 cup peaches till crumbly. In two small ramekins or one larger one, evenly distribute remaining peach and plum. Top with oat crumble. Place in oven uncovered for 20 minutes, or until golden brown. Serve warm or chilled.
