This recipe tastes something like french fries. The potatoes remain a vivid purple, even when roasted. Sesame seeds offer contrasting sprinkles of color and a boost of calcium, which helps bone strength.
Roasted Purple Potatoes
1 pound purple potatoes, cut into ½-inch wedges
2 Tbsp. canola oil
Salt and pepper, to taste
2 Tbsp. raw sesame seeds
Preheat oven to 400 degrees. Place potatoes in a roasting pan. Toss with canola oil, salt and pepper. Sprinkle with sesame seeds and toss again to evenly distribute the seeds. Roast, stirring occasionally, until the potatoes are cooked through, about 25 minutes.
