Ayurvedic Avocado Salad
Rules of Engagement star Bianca Kajlich finds peace in Ayurveda. Kajlich says Ayurvedic practitioners “like to keep things simple.” This salad also keeps things delicious.
2 tsp. olive oil
Juice from 1/2 lemon
1 pinch sea salt (Kajlich uses black lava salt she orders from Hawaii)
2 cups spinach
Chopped carrots, sesame seeds or pine nuts, to taste
Combine olive oil, avocado, lemon juice and sea salt in a bowl, mashing until mixed. Toss with spinach and remaining ingredients.
