October is National Pasta Month–so why not give this low-maintenance, one-pot pasta recipe a try?
Jenni Polus’ mom makes a killer fruit pie—but her daughter lightened it up to make it work for a leaner lifestyle.
1 box vanilla instant pudding
3 cups fat-free milk
1 cup strawberries, sliced
1 cup raspberries
1 cup boysenberries (or blueberries)
1 graham-cracker pie crust
1 8 oz. container fat-free Cool Whip
In a standing mixer, beat pudding mix and milk together for two minutes. Pour into graham cracker crust. Chill for 90 minutes. In the meantime, mix together strawberries, raspberries and boysenberries. Take pie out of fridge, top with berries and Cool Whip. Enjoy!
